Preparation Steps

Step 1: Prepare the Potatoes

  • Bake potato fingers until half cooked.
  • Drain and pat dry completely.
  • Blend a coating mixture of corn flour, all-purpose flour, pepper and salt.
  • Add potatoes into the flour mixture until it is all covered.

Step 2: Fry to Perfection

  • Deep-fry potatoes on medium heat in heat oil until crispy and golden.
  • Take out, drain off the surplus oil and allow them to cool.
  • The potatoes can be again fried in high flame to be twice crisp. This is what makes the potatoes remain crisp even when glazed.

Step 3: Prepare the Sauce

  • Heat a pan with 1 tbsp oil.

  • Pat chicken pieces dry.
  • Add fresh cream, curd, cheese, ginger-garlic paste, pepper, chillies, cardamom powder, garam masala, lemon juice, oil and salt in a bowl.
  • Stir and prepare a smooth and juicy marinade.
  • Add chicken cubes, coat thoroughly and put in refrigerator for 3 hours or overnight.

Cooking Method

Oven / Tandoor:

  • Preheat to 220°C.
  • Skew threaded chicken and grill 15-18 minutes.
  • Wipe with butter halfway in order to get an added softness.

Stovetop:

  • Heat a non-stick fry pan using a small amount of butter.
  • Roast the chicken until brown and a little charcoal gets burnt.

  • Squeezer of fresh coriander and lime juice.
