How to Make Beetroot Dosa for Kids

Ingredients:

1 cup rice (regular or dosa rice)
1/4 cup split urad dal (black gram split)
1 medium beetroot (grated or chopped)
1/2 tsp cumin seeds (optional)
1 small green chili (optional)
1-inch piece of ginger
Salt to taste
Water as needed
Oil or ghee for frying (use as per preference)

Instructions:

Step 1: Soaking the Rice and Dal

Wash the urad dal and rice very well. To get the best results, they should be soaked in water about 4-6hr or overnight. Absorbing the batter in water produces good fermentation and crisp dosas.

Step 2: Grinding the Batter

Wash the wet rice and dal. Mix rice, urad dal, and grated beetroot with a blender or wet grinder. Use a small amount of water to facilitate the process of grinding. The pancake batter-like consistency of the batter should be thick enough to pour.

To the batter, you can also add a hint of tradition with cumin seeds, green chilies, and ginger. But you may omit the chili in case you are preparing the dosa to younger children to make it sweet, not very spicy.

Once creamy, transfer the batter into a big bowl, cover, and ferment 6-8 hours or overnight (at whatever room temperature) until the batter rises, triples, and deflates. The trick to a light and crispy dosa is through fermentation.

Step 3: Preparing the Dosa

The batter should be bubbling slightly and be fermented to be usable.

Mix the batter and salt to taste.

A griddle or non-stick tawa should be heated on medium-high heat. Add a small amount of oil or ghee to the hot pan.
