 Ingredients Mushroom Risotto

  1.  1 ½ cups Arbor rice
  2.  4 cups vegetable broth (keep warm)
  3. 1 cup white wine (optional)
  4. 1 onion, finely chopped
  5. 3 cloves garlic, minced
  6. 1 lb. mushrooms (button or mix), sliced
  7. 3 tablespoons olive oil
  8. 2 tablespoons butter
  9. 1 cup grated Parmesan cheese
  10. Salt and pepper to taste
  11. Fresh parsley, chopped (for garnish)
